Creamy Vegetable Pasta Recipe

PASTA its the ultimate comfort food. Mostly importantly its delicious, easy to cook and above all, economical. It can can cooked simply tossed in a sauce, salads or veggies. one of the main reasons we love this dish is because its simple and quick. Only my daughter is very fond of Italian recipes, thus we often cook this at home. You can add endless veggies, maitakes and all other flavorful varieties worth adding.
This dish is perfect by itself but you can also add chicken too ! This is much similar to white sauce but instead we added a creamy element to make it more rich. You can definitely add this to your meal plan. If you like pasta dishes, you would want to try this one. Its super cheesy with the right amount of garlic and other spices making it prefect for diners.

Ingredients
1 1/2 cup - Pasta ( we used Farfalle & Rotini)
2 tbsp - Olive oil
4 tbsp - Butter, unsalted
3 tsp - Garlic, minced
1 - White onion (medium), finely chopped
1/2 - Zucchini, diced
300 grams - Mushrooms, diced
50 grams - Sweet corn
2 - Baby corn, diced
350 grams - Cooking cream
1/2 cup - Parmesan, finely grated
2 tsp - Mixed herbs (oregano, basil, thyme, parsley and chilly flakes)
1/2 tsp - Ground black pepper
Salt to taste
Recipe Direction
1. Melt butter in a medium pan and add garlic
2. Cook for about 1 minute over medium heat
3. Add onions and vegetables to the butter garlic mixture
4. Reduce heat to medium low, cook them till it turns softened, about 2 minutes
5. Meanwhile, Cook pasta in a large pot of boiling water with olive oil and 1 tsp of salt, stirring occasionally
6. Cook until about 2 minutes less than the package directions
7. Using pasta drainer, transfer pasta to pot with vegetables
8. Add cooking cream, increase heat to medium, bring to a simmer
9. Stir constantly till the liquid is slightly thickened, about 2 minutes
10. Remove pot from heat, add Parmesan, mixed herbs, pepper
11. Taste and season with more salt if needed
12. Transfer to a plate and top with more Parmesan
13. Serve hot with garlic bread and enjoy while it lasts
Additional Notes
1. Always cook pasta less than at least a minute than the package directions
2. You can always add more or less cream according to the consistency you want
3. If you want your pasta to be extra cheesy, add about 1/2 cup of any type shredded cheese
4. There are so many things you can add to this recipe. Try adding grilled chicken or shrimp
