Kodo Millet Sweet Pongal Recipe

Sweet Pongal is a traditional South Indian dish usually made with rice and variety of organic ingredients. We have given it a twist today and made this with organic Kodo Millet which is gluten free and rich in antioxidants and phytochemicals, all of which helps to prevent major lifestyle diseases.

Total Time : 30 Minutes

Servings: 4

Ingredients

1 Cup - Kodo Millet

1/4 Cup - Yellow Moong Dal (Mung Beans)

1 Cup - Crushed Jaggery

1/2 Cup - Fresh Shredded Coconut

3/4 Cup - Ghee

3 Cup - Water

50 Grams - Cashews

25 Grams - Dry Raisins (*Optional)

1 tsp - Cardamon Powder

Recipe Directions

1. In a medium pressure cooker, add kodo millet, moong dal, 1 tbsp ghee and water

2. Pressure cook for about 3 - 4 Whistles

3. Make sure the millet and dal is cooked completely

4. Now add ghee and jaggery to the cooked millet - dal mixture

*Optional, to add more water for adjusting consistency as required

5. Simmer for about 2 - 3 minutes until jaggery combines well with millet - dal mixture.

6. Meanwhile in a small pan, add 2 tsp ghee and roast cashews & raisins.

7. Now add roasted cashews & raisins, shredded coconut and cardamon powder to the millet - dal mixture.

8. Add 2 tbsp ghee and give it a good mix until it turns glossy enough to serve.

9. Serve hot and eat with a happy heart.

Additional Notes

1. For better taste, use best and clean jaggery if can

2. You can add more or less jaggery based on your sweetness level.

3. Use good quality ghee or homemade ghee for better flavor and savor

4. You can always add extra ghee ( More ghee is always better)
